1 tsp olive oil
1 cup(s) , peeled and shredded uncooked jicama
1/4 cup(s) , chopped uncooked onion(s)
1/4 tsp table salt
2 tsp , chopped fresh parsley
1 large egg(s) egg(s)
1/8 tsp , or less to taste paprika
Heat oil in a large nonstick skillet over medium heat. When hot, increase heat to high and add jicama, onion and salt. Sauté until jicama and onion are lightly browned and tender, about 6 minutes; remove to plate and sprinkle with parsley. Add egg to skillet; cook sunny-side up or over-easy to desired degree of doneness. Top hash with egg; sprinkle with paprika (season with salt and pepper, if desired). Yields 1 serving.
